- 2 Stalks Green Onions
- 2 - 3 Cloves Garlic
- 1 Cup of Beans
- ¼ Cup Water
- ½ t. Cumin
- 6 oz Tofu or Tempeh
- 4 - 6 Corn Tortillas
- Coconut Oil - Optional
- Cook Onions in Non Stick pan for 5 minutes until golden, add garlic for 1 minute.
- Add beans, water, cumin, and Tempeh and cook for 5 minutes more.
- Warm up tortillas, I use steam in microwave.
- Serve on tortillas.
- Can top with Cilantro, Tomatoes, Avocado, Salsa, Radishes, Olives.
